Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain Greek yogurt
  • 1/2 cup honey
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 1/2 cups fresh blueberries


Instructions:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, oats, baking powder, baking soda, salt, and lemon zest.
  3. In a separate bowl, whisk together the applesauce, Greek yogurt, honey, melted coconut oil, eggs, and vanilla extract until well combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
